And brava to you for working until you got the results you wanted.<br /><br />I just checked out "Artisan Breads in 5 Minutes a Day" - the theory is you make a very wet yeast dough and store it in the frig for up to two weeks, taking about 1/4 of it at a time to make a loaf.
